Today I tried Kangaroo leg for the first time. Since leg meat is cheaper than other parts and supposed to need stewing to be edible, I had been anxious about eating it raw. But no problem at all with the Burn-and-Slice Method. It was as tender and juicy as surloin or rump. I decided to add it to our routine menu.
